Instant Pot Creamy Chicken and Rice tastes like cozy chicken and rice soup met risotto and decided to become a thick, ultra-comforting one-pot dinner. It works perfectly for busy nights when you want real food on the table in about 35 minutes, start to finish. I have cooked some version of this since my early twenties, back when my Instant Pot lived on a wobbly dorm microwave cart.
Why Make This Instant Pot Creamy Chicken and Rice at Home
Instant Pot Creamy Chicken and Rice gives you tender chicken, soft but not mushy rice, and a rich, creamy sauce without babysitting a pot on the stove. You control the salt, the quality of the broth, and how thick and cheesy you like it.
You also save money compared to takeout and avoid mystery ingredients. Cleanup stays easy because everything cooks in one pot, including the rice.

Ingredients You Need
Here is what you need for Instant Pot Creamy Chicken and Rice, plus some helpful notes from a decade of trial and error.
Chicken
- Boneless skinless chicken breasts
- Slice them in half lengthwise if they feel very thick.
- Use thighs if you prefer richer flavor and extra tenderness.
Rice
- Long grain white rice
- Jasmine or standard long grain both work well.
- Avoid brown rice here because it needs a much longer cook time and throws off the texture.
Aromatics and veggies
- Yellow onion, finely chopped
- Garlic, minced
- Carrots, diced small
- Celery, diced small
- Frozen peas
- Toss peas in at the end so they stay bright and sweet.
- Optional: sliced mushrooms for extra savory flavor
Liquid and creamy ingredients
- Low sodium chicken broth
- Use low sodium so you control the salt level.
- I like Better Than Bouillon roasted chicken base for a pantry shortcut.
- Heavy cream or half and half
- Heavy cream gives the richest texture.
- Half and half works if you want it a bit lighter.
- Cream cheese, softened and cut into cubes
- This helps the sauce turn silky and thick.
Cheese and flavor boosters
- Freshly grated Parmesan cheese
- Grate it yourself if possible, since bagged shreds often include anti-caking agents that affect melting.
- Butter
- Olive oil
- Salt and black pepper
- Dried thyme
- Dried parsley or Italian seasoning
- Garlic powder and onion powder
- Optional: a pinch of smoked paprika for a subtle cozy flavor
Thickener (optional)
- Cornstarch mixed with cold water
- Use this only if you want a very thick, almost casserole-style texture.
Equipment
- 6 or 8 quart Instant Pot or other electric pressure cooker
- Silicone spatula or wooden spoon
- Measuring cups and spoons
- Chef’s knife and cutting board
- Small whisk for mixing cream and cheese into the hot rice
Tips & Mistakes
- Sauté the onion, carrots, celery, and garlic until they soften and smell fragrant so the base tastes rich and not bland.
- Rinse the rice under cold water until the water runs mostly clear so the final dish turns creamy, not gluey.
- Layer the ingredients and avoid stirring after you add the rice and broth so you prevent the dreaded burn notice.
- Place the chicken pieces on top of the rice instead of under it so the rice cooks evenly and does not scorch.
- Use low sodium broth so you can season at the end and avoid an overly salty pot.
- Cut the cream cheese into small cubes and add it after pressure cooking so it melts smoothly and does not curdle.
- Let the Instant Pot sit for a 10 minute natural release so the rice finishes gently and stays tender.
- Stir gently when you add cream and cheese so you keep the rice grains intact and avoid mush.
- Add frozen peas and any quick-cooking veggies at the end so they stay bright and do not turn gray.
- Taste and adjust salt, pepper, and herbs at the very end because the flavors concentrate during pressure cooking.
How to Make Instant Pot Creamy Chicken and Rice
Step 1: Prep the ingredients
Chop the onion, carrots, and celery into small, even pieces so they cook at the same rate. Mince the garlic. Rinse the rice under cold water, swishing it with your fingers, until the water looks mostly clear.
Pat the chicken dry with paper towels and season both sides with salt, pepper, garlic powder, and onion powder. Cut very thick breasts in half lengthwise so they cook evenly. Cube the cream cheese and grate the Parmesan so they stand ready for quick melting.
Step 2: Sauté the aromatics
Set the Instant Pot to Sauté and let it heat for a minute. Add a drizzle of olive oil and a tablespoon of butter. Toss in the onion, carrots, and celery with a pinch of salt.
Cook, stirring often, until the veggies soften and the onion turns translucent, about 4 to 5 minutes. Add the garlic and cook 30 seconds, just until fragrant. Cancel Sauté so the pot does not get too hot.
Step 3: Add rice and liquid in the right order
Spread the rinsed rice evenly over the veggies. Do not stir at this point. Pour in the chicken broth, gently, so the rice stays mostly in place.
Sprinkle in dried thyme, parsley or Italian seasoning, and a small pinch of smoked paprika if you use it. Give the broth a very gentle nudge around the edges with a spatula, but avoid digging down to the rice. You want the rice mostly submerged but not heavily stirred into the veggies.
Step 4: Add the chicken
Lay the seasoned chicken pieces in a single layer on top of the rice and broth. Press them down just enough so liquid touches the bottom of each piece. Keep them mostly on top so the rice cooks evenly underneath.
Lock the lid in place and set the valve to Sealing. Set the Instant Pot to Manual or Pressure Cook on High for 8 minutes.
Step 5: Natural release and check doneness
When the cook time ends, let the Instant Pot sit for 10 minutes. After 10 minutes, carefully switch the valve to Venting and release any remaining steam. Open the lid and set it aside.
Check the chicken with an instant read thermometer. It should read at least 165°F in the thickest part. Remove the chicken to a cutting board and let it rest while you finish the rice.
Step 6: Make it creamy
Switch the Instant Pot back to Keep Warm. Stir the rice gently to loosen it from the bottom. Add the cream cheese cubes and stir until they melt and coat the rice.
Pour in heavy cream or half and half and stir again. Add grated Parmesan and keep stirring until everything looks creamy and smooth. Taste and season with more salt and pepper if needed.
If the mixture looks too thick, splash in a bit more broth or cream. If it looks too loose, stir a cornstarch slurry into the hot rice and cook on Sauté for 1 to 2 minutes while you stir.
Step 7: Add peas and finish the chicken
Stir in the frozen peas. The heat from the rice warms them in a couple of minutes and keeps their color bright. Turn off the Instant Pot so the rice does not overcook.
Slice or shred the chicken and add it back to the pot. Fold it gently into the creamy rice. Sprinkle with extra parsley or a little more Parmesan if you want that cozy casserole vibe.
Variations I've Tried
I swap the carrots and peas for chopped broccoli florets and a handful of shredded cheddar for a chicken broccoli cheddar version. I stir in a spoonful of pesto at the end with the cream and Parmesan for a herby, slightly green twist that kids still devour. I also make a Tex Mex style batch with chili powder, cumin, corn, and black beans, then top bowls with avocado and a squeeze of lime.
Sometimes I use chicken thighs instead of breasts when I want richer flavor and extra tenderness. I also swap half the broth for unsweetened coconut milk, skip the cheese, and add curry powder for a creamy curry chicken and rice that tastes cozy but still simple. When I feel like extra veggies, I stir in baby spinach at the end until it wilts into the sauce.
How to Serve Instant Pot Creamy Chicken and Rice
Serve Instant Pot Creamy Chicken and Rice in warm bowls and top it with extra Parmesan, chopped parsley, or sliced green onions. Add a crisp green salad or simple steamed green beans on the side to balance the richness. Garlic bread, toasted pita, or a slice of crusty bread works great to scoop up every bit of the creamy rice.
Kids usually love this as is, but you can set out toppings like shredded cheese, diced tomatoes, or a dollop of plain Greek yogurt. I also like to pack leftovers in thermoses for school or work lunches, since the rice stays comforting and filling.
How to store
- Fridge: Cool the Instant Pot Creamy Chicken and Rice to room temperature, then store it in airtight containers in the fridge for up to 3 to 4 days.
- Freezer: Portion into freezer safe containers, press plastic wrap directly on the surface to reduce ice crystals, seal, and freeze for up to 2 months.
- Reheating on stove: Add a splash of broth or milk to a skillet, add the cold chicken and rice, and warm over medium heat while you stir until creamy and hot.
- Reheating in microwave: Place a serving in a microwave safe bowl, stir in a spoonful of broth or milk, cover loosely, and heat in 45 to 60 second bursts, stirring between each round until hot and smooth again.
